This quality junmai rice wine sake, made in Uonuma City in Niigata, is a pure wine made of nothing but 100% Japan-grown rice polished to 65% of its original size, and rice koji mould for breaking the rice down into sugars for fermentation. Allowed to ferment for a long time in relatively low temperatures, this sake deliciously combines dryness with the umami richness of quality rice.
